Le reste des l\u00e9gumes pr\u00e9sentait une temp\u00e9rature de la pulpe ad\u00e9quate et ne montrait aucun signe de gel. Comment la temp\u00e9rature de la pulpe peut-elle varier autant dans la remorque?<\/p>\n<p>R\u00a0: \u00a0\u00a0Avant de chercher \u00e0 comprendre comment cela a pu se produire, notons d\u2019abord que le transporteur est responsable du maintien de la temp\u00e9rature durant le transport. Il n\u2019est pas responsable de refroidir ni de r\u00e9chauffer les produits. Trois raisons peuvent expliquer comment des dommages par le gel peuvent ne survenir qu\u2019\u00e0 une partie du chargement\u00a0: a) les produits ont \u00e9t\u00e9 charg\u00e9s alors qu\u2019ils \u00e9taient plus chauds que la temp\u00e9rature \u00e0 laquelle a \u00e9t\u00e9 r\u00e9gl\u00e9e l\u2019unit\u00e9 r\u00e9frig\u00e9rante; b) une mauvaise disposition du chargement qui a emp\u00each\u00e9 l\u2019air de circuler librement ou obstru\u00e9 la chute d\u2019air; ou c) une mauvaise isolation thermique de la remorque ou des temp\u00e9ratures ext\u00e9rieures extr\u00eames.<\/p>\n<p><strong>a) Produits charg\u00e9s \u00e0 une temp\u00e9rature plus chaude que celle \u00e0 laquelle est r\u00e9gl\u00e9e l\u2019unit\u00e9 r\u00e9frig\u00e9rante<\/strong><\/p>\n<p>Le connaissement indique que la temp\u00e9rature doit \u00eatre maintenue \u00e0 33<sup>o<\/sup>F. Au moment de son chargement, la temp\u00e9rature de la pulpe est de 38<sup>o<\/sup>F; son point de cong\u00e9lation est de 30,5<sup>o<\/sup>F. L\u2019unit\u00e9 r\u00e9frig\u00e9rante est r\u00e9gl\u00e9e \u00e0 34<sup>o<\/sup>F en mode continu. Dans une telle situation, le capteur de retour d\u2019air commencera \u00e0 enregistrer la temp\u00e9rature des produits (38<sup>o<\/sup>F) et relaiera \u00e0 l\u2019unit\u00e9 r\u00e9frig\u00e9rante le message qu\u2019elle doit imm\u00e9diatement abaisser la temp\u00e9rature \u00e0 sa sortie pour abaisser la temp\u00e9rature de la remorque. En cons\u00e9quence, les produits directement expos\u00e9s \u00e0 la d\u00e9charge d\u2019air de la chute pourront exhiber des dommages caus\u00e9s par le gel parce que la temp\u00e9rature de l\u2019air \u00e0 la sortie de l\u2019unit\u00e9 sera plus basse que le point de cong\u00e9lation de ces produits.<\/p>\n<p><strong>b) Mauvaise r\u00e9partition du chargement bloquant la circulation d\u2019air ou obstruant la chute d\u2019air<\/strong><\/p>\n<p>Une r\u00e9partition de la charge qui ne permet pas une circulation d\u2019air ad\u00e9quate peut faire en sorte que les temp\u00e9ratures lues par le capteur de retour d\u2019air soient plus \u00e9lev\u00e9es que celle \u00e0 laquelle l\u2019unit\u00e9 r\u00e9frig\u00e9rante est r\u00e9gl\u00e9e et, en cons\u00e9quence, envoie un message \u00e0 celle-ci ayant pour effet de r\u00e9duire la temp\u00e9rature \u00e0 la sortie de l\u2019appareil. Normalement, une chute d\u2019air obstru\u00e9e occasionnera une temp\u00e9rature de la pulpe plus \u00e9lev\u00e9e \u00e0 l\u2019avant du camion qu\u2019\u00e0 l\u2019arri\u00e8re. Cela peut r\u00e9sulter d\u2019une temp\u00e9rature tr\u00e8s froide en hiver ou d\u2019une temp\u00e9rature tr\u00e8s chaude en \u00e9t\u00e9. Comme dans l\u2019exemple pr\u00e9c\u00e9dent, l\u2019unit\u00e9 r\u00e9frig\u00e9rante, pour compenser, donnera de l\u2019air trop froid ou trop chaud afin de corriger le probl\u00e8me. Par exemple, si un camion voyage \u00e0 travers le nord des \u00c9tats-Unis ou au Canada durant l\u2019hiver et qu\u2019il n\u2019est pas suffisamment isol\u00e9, il y a de fortes chances que les palettes les plus pr\u00e8s du mur subissent du gel.
